Wow! Thanksgiving is right around the corner, and nothing screams Thanksgiving more than pumpkin! When it comes to the fall holiday season, I love pumpkin spice flavored everything. My recipe replicates the taste of pumpkin pie and includes a sweet cinnamon icing. So, why make pumpkin pie when you can make these bite sized cookies?! These cookies are light and soft with a slight crisp on the edge. My take on a festive holiday treat is sure to be a favorite on your dessert table as I know that they will be on mine!

Update: The cookies were a huge hit, everyone seemed to love them!

Bake Time: 13 minutes Makes: about 36 cookies

What You’ll Need (Cookies)

2 1/2 cups of flour

1 teaspoon of baking powder

1 teaspoon of baking soda

1/2 teaspoon of salt

1 1/2 teaspoon of pumpkin pie spice

1 1/2 cup of white granulated sugar

1 stick of softened butter

1 large egg

1 teaspoon of vanilla extract

1 cup of pure pumpkin puree (NOT pumpkin pie filling!)

What You’ll Need (Icing) 

2 cups of powdered sugar

3 tablespoons of milk

1 tablespoon of melted butter

1 teaspoon of vanilla extract

2 tablespoons of ground cinnamon

Directions

  1. Preheat oven to 350 degrees.
  2. Place parchment paper over pan.
  3. Combine flour, baking powder, baking soda, salt, and pumpkin pie spice into a bowl.
  4. In large bowl, add the butter and sugar inside. Have the other wet ingredients (Egg, pumpkin puree, and vanilla extract) off to the side

  5. In a large glass bowl, cream together butter and sugar using a handheld or stand bowl electric mixer.

  6. Once combined, add eggs, vanilla extract, and pumpkin puree.

  7. Gradually add in your dry mixture. (Make sure to do this slowly or else the flour will fly everywhere!)

  8. Lick some batter off of the mixing whisk. (I think I’m just going to make this a permanent step :P)
  9. After eating some of your yummy pumpkin spice cookie batter, use your trusty 1 inch ice cream scoop to and place the cookies onto your lined baking sheet.

  10. Bake at 350 degrees for 13 minutes. (You will know when to pull them out because they will have slightly browned edges)
  11. Prepare the glaze. Add the powdered sugar, vanilla extract, milk, cinnamon, and melted butter into a bowl and mix until completely combined.

  12. Place on a cooling rack and immediately add the icing to the warm cookies.

  1. Hi!! Wow, these look so good! I will definitely make these soon! Do they really taste like pumpkin pie? I don’t think I’ve ever had a pumpkin cookie before, but I bet they’re really good!

    • Hey Lucy! Pumpkin pie really is simple to recreate in different foods. All you need is a little bit of pumpkin pie spice because pumpkin itself has very little flavor. Thanks for your feedback!

  2. Seems like a really simple recipe I’ll make sure to try it out! You should definitely make licking the batter off a permanent step on with you on that one! Do you think maybe if you put food coloring in the icing you could get Christmas pumpkin cookies? If i ever try this I’ll make sure to try red and green icing :). Thanks for the post!

    • Hey Grace! I think I definitely will be making it a permanent step! Since the icing is white, you can for sure add any color food coloring to it. Careful not to add to much in or else it will stain your teeth, been there done that. Haha, it was a mess! Thanks for your feedback 🙂

  3. Hey Chelsea! I never knew I would ever want a pumpkin spice cookie until I saw your recipe. I especially love the name, it really made me laugh. Sadly I didn’t see this before thanksgiving but I am definitely making these anyways. I was just wondering though could you think of another flavor for the icing that would still go with the cookies? I also love how in just 13 minutes you can get 36 cookies! Keep up the awesome blog, I really enjoy it. 🙂

    • Hey Sara! I’m glad you liked the name, I thought it was a bit punny :P. The icing can really be any flavor you think will taste good. It can be chocolate, vanilla, mint, anything you can melt in or add into the mixture! If you are doing any sort of chocolate icing, the chocolate must be melted chips and not powder. Other than that you can totally get creative! Also, thanks so much for your sweet feedback, I’m very happy that you enjoy it!

I actually have never tried but I was watching a show on Food Network about the holidays and they had to make them and it peaked my interest. I actually think adding a kind of marshmallow filling would be really good to sandwich two cookies, who knows, maybe I’ll try that soon! Thanks again, hope to see you back here soon!
